Watermelon Muffins

Recipe : Watermelon Muffins
Method :

1 1/2 c Flour

2 ts Baking soda

1 ts Baking powder

1 pn Salt

1/8 ts Cinnamon

6 tb Butter; room temperature

2/3 c Sugar

2 Eggs

1/2 c Milk

1/2 c Watermelon juice

1/2 c Watermelon pulp

1/2 c Raisins

Sift flour, baking powder, baking soda, salt and cinnamon in large bowl. Cream butter and sugar; add eggs. Whip in milk, juice, pulp and raisins. Add wet mixture to dry ingredients; blend just to incorporate. Fill greased muffin cups 2/3 full. Bake 25 minutes. Transfer to wire rack; cool. Waltons Mountain Coffee Cake

Recipe : Waltons Mountain Coffee Cake
Method : 1/2 c Pecan halves

2 ea 15 oz. packages frozen white

-dinnerroll dough (18-24 -dough balls total) 1 pk (4 serving-size) INSTANT

-butterscoch pudding mix 1 c Packed brown sugar

1/2 c Butter or margarine

1/8 ts Ground cinnamon

Generously grease a 10 in fluted tube pan. Sprinkle pecans in the bottom of the pan. Arrange the frozen dough balls on top of the pecans. Sprinkle pudding mix over dough balls. In a small saucepan cook and stir brown sugar, butter or margarine along with cinnamon till butter is melted. pour butter mixture over pudding mix and dough balls in the tube pan. Cover and refigerate for 12 to 24 hrs. Uncover and bake 350 F oven about 35 minutes or till top is golden brown. Immediately invert coffee cake onto a good size serving tray. This gets a bit messy! Let stand about 15 minutes to cool slightly. Union Pacific Apple Pancakes

Recipe : Union Pacific Apple Pancakes
Method :

1 c Flour

1/4 t Salt

1 1/2 t Baking powder

1 T Melted butter

1/2 c Milk

1 ea Beaten egg

1/2 t Vanilla

1 1/4 c Homemade applesauce

Sift flour, salt and baking powder. Combine butter, milk and egg. Stir into flour. Add vanilla and applesauce. Beat well. Spoon batter into a hot, well greased griddle, allowing enough batter to make 4" cakes. When edges are lightly browned, turn and cook on second side. Uncle’s Favorite Blueberry Muffins

Recipe : Uncle's Favorite Blueberry Muffins
Method :

1/2 c Butter

1 c Sugar

2 c Flour

1/2 c Milk

2 ts Baking powder

1/2 ts Salt

2 c Blueberries

1 ts Vanilla

2 Eggs

Sugar, for topping Cream butter and sugar. Add eggs, one at a time. Mix until blended. Sift all dry ingredients, add alternately with milk and vanilla. Mash 1/2 cup blueberries; stir into batter. Add remaining whole berries. Grease tins or use liners. Pile batter high. Sprinkle with sugar. Bake at 375F for 30 minutes. Makes 12 muffins.


Turkey Breakfast Sausage

Recipe : Turkey Breakfast Sausage
Method :

1 lb Ground turkey

2 Garlic cloves; minced

1/4 c Onion; chopped

1 ts Fresh sage; chopped

1 ts Fresh thyme; chopped

1 ts Fresh basil; chopped

1/2 ts Salt

1/4 ts Black pepper

1/4 c Soda cracker crumbs

1 tb White wine or water

Mix all ingredients thoroughly with a spoon or your hands; shape into patties or links and brown in a skillet, or use as bulk sausage in recipes. Recipe from Elizabeth Garner/Sacramento, CA.
