Wild Rice Pancakes

Recipe : Wild Rice Pancakes
Method :

2 c Flour

1 ts Salt

4 ts Baking powder

3 tb Sugar

1 Egg

1 1/2 c Milk

1/3 c Oil

1 tb Sour cream

3/4 c Cooked wild rice

Mix flour, salt, baking powder and sugar. Set aside. Beat eggs; add milk,oil, sour cream and wild rice. Add to dry ingredients. Batter will be lumpy. Cook on heated griddle. ALTERNATIVE: Add 1 cup cooked wild rice to your favorite pancake mix. Makes 12-14 pancakes. Whole-Wheat French Toast with Orange Slices

Recipe : Whole-Wheat French Toast with Orange Slices
Method :

1 lg Egg

2 lg Egg whites

1 tb Low-fat milk

1 t Grated orange peel

1/2 ts Vanilla extract

1/8 ts Ground cinnamon

1 tb Vegetable oil

4 sl Whole-wheat toast

Wheat germ, optional -----ORANGE SLICES----- 2 Seedless oranges -- peeled

- white pith removed, halved - and sliced into rounds 2 ts Sugar

1/2 ts Vanilla extract

in shallow bowl, beat egg, egg whites, milk, orange peel, vanilla, and cinnamon until blended. In large nonstick skillet, over medium heat, heat oil. Dip bread in egg mixture to coat both sides; add to skillet. Cook 3 to 4 minutes on each side, or until browned, turning once. Serve hot wtih Orange Slices (see recipe below) and sprinkled with wheat germ. ORANGE SLICES: In small bowl, combine all ingredients; toss to coat. Let stand 1 hour to blend flavors. Whole-Grain Breakfast Cereal

Recipe : Whole-Grain Breakfast Cereal

1 c Whole wheat berries

1 c Whole rye berries

1 c Whole triticale

1 c Whole barley

1 c Brown rice

1 c Buckwheat groats

1 c Millet

1 c Sesame seeds

1 c Flaxseed

1 c Lentils

10 c Oat groats

I mix it up, then cook a pot of it by measuring 2 cups of cereal to 5 cups of water, bringing it to boil, & then letting it sit over night. Then I have a bowlful each morning, heated in the microwave until the cooked cereal is gone and I need to make more. Or you could do the same with a smaller amount, for one serving, say, try 1/4 cup of cereal. It's very chewy and satisfying. And of course lots of whole grains. Sometimes I just use oatmeal instead of oat groats, since they are difficult to find and I like the consistency that oatmeal adds. In the book he has a little paragraph about each grain, explaining what vitamins/minerals it has & what it's good for. Whole Wheat Waffles

Recipe : Whole Wheat Waffles
Method :

1 1/3 c Whole wheat flour

3/4 ts Salt

2 ts Baking powder

2 tb Sugar

1 c Milk

4 tb Melted shortening

2 Eggs

Beat egg yolks well;p add milk and shortening. Combine salt, sugar, and flour. Add to first mixture. Beat until smooth. Fold in stiffly beaten egg whites. Sift baking powder lightly over the mixture and fold in quickly. Bake in hot waffle iron. 6 servings. The Household Searchlight - 1941

1 tb Baking powder

1 c Milk

1/2 tb Baking soda

2 tb Oil

1/2 tb Salt

3/4 c Whole wheat flour

1 tb Honey

BEAT EGG. ADD OTHER INGREDIENTS AND BEAT UNTIL SMOOTH. BAKE ON LIGHTLY OILED GRIDDLE UNTIL GOLDEN BROWN, TURNING ONCE. Barb Day -----
